Ingredients

    4 Cups Old fashioned oat meal
    1 cup wheat bran (or oat bran)
    2 c self-rising flour (or flour with baking soda)
    1/2 cup sunflower seeds (or nuts or sesame)
    2 eggs
    1 cup applesauce
    3 ripe/mushy plantains, mashed (or over-ripe bananas)
    1 cup or more skim milk
    1/2 cup splenda
    3 tbsp. cinnamon
    [option to add raisins, craisins, fruit chunks; and/or sprinkle with cinnamon sugar/splenda before baking]

Directions

Preheat oven at 350 degrees. Grease cookie/muffin sheets. Drop heaping TSB of dough leaving 1/2 inch spacing. Bake 15-20 min until firm.
Alternately: add milk/water to make batter like pancakes, fry as 4 inch cakes.
