Ingredients

    3 hard boiled eggs
    1/4 cup light mayo
    1 avocado chopped
    1 T pickle relish
    1 small can waterchestnuts
    7 oz tuna
    1/2 t salt
    dash black pepper
    1/4 t garlic
    1/4 t onion powder

Directions

Combine all ingredients thoroughly, and use for sandwiches, on top of lettuce or crackers. Approximately 6 servings.

    Satisfying tuna salad. The avocado adds a creaminess and richness to the salad that curbs the desire for not so good fats. Love the crunch the water crestnuts added to the dish. I normally don't like water crestnuts and I ate them right up! I ended up using 14 oz of tuna. - 4/25/08
