Ingredients

    1 12-oz package Bob Evans Breakfast sausage patties
    1 cup minced green pepper (about 1 medium)
    1 cup finely chopped onion (about 1 medium)

    Then for each burrito:
    1 tortilla
    1/2 slice of 80 calorie cheese of your choice
    1 egg
    1 Tbsp liquid egg whites
    salt & pepper to taste

Tips

Making the sausage mixture ahead takes about 1/2 hour. Making the individual burritos takes about 5 minute.


Directions

In a large no stick frypan, cook breakfast sausage patties over medium high heat until cooked through browning both sides. Remove from pan, drain on paper towel. Add onions and peppers to frypan, saute over medium heat until nearly soft. Meanwhile, chop sausage patties. Add chopped sausage patties to vegetables in frypan, cook and stir one minute. Remove from heat, spread over a cookie sheet, place in freezer. When mixture is completely frozen, break up clumps, and store in freezer bag in freezer for later use.

To make individual burrito, remove a scant 1/4 cup of mixture from the freezer, place in small no stick frypan and cook over medium heat until thawed and starting to sizzle. In the meantime, in a small mixing bowl, combine 1 egg, 1 Tbsp liquid whites, 1 Tbsp 1% milk; beat with a fork until combined and uniform in color. Add egg mixture to sausage mixture in frypan, stirring frequently until eggs are completely cooked. Remove pan from heat. Place 1 tortilla on a microwave-safe plate, add 1/2 slice of cheese to center of tortilla. Place in microwave and cook on high power 30 seconds. Remove from microwave, turn egg mixture onto center of tortilla. Fold edges of tortilla over egg mixture forming a burrito. Serve.
