Ingredients

    8 garlic cloves, minced
    1/4 cup unsalted butter
    1 head of cauliflower
    1/2 cup shredded romano or parmesan cheese
    32 oz vegetable broth
    salt and pepper to taste

Tips

better to over cook the cauliflower than under cook. Consider adding whole milk or more cheese to make it creamier.


Directions

cut cauliflower into floweretes and boil until tender in 32 oz of vegetable broth. Melt butter in a small skillet and add garlic, saute until flavorful. add all ingredients to blender/processor and blend until smooth.

Serving Size: makes 6 servings of 2/3 cups each
