Ingredients

    2 cups old fashion oatmeal
    1/3 cup unsweetened shredded coconut flakes
    1/4 cup honey
    2/4 cup natural maple syrup
    1 Tbs. cinnamon
    1 tsp. baking powder
    1 cup raspberries (divided)
    1 cup walnuts, chopped
    2 cups unsweetened almond milk
    1 large egg
    1 Tbs. vanilla extract
    1 banana, peeled and sliced

Tips

Substitute pretty much any berries or nuts for the raspberries and walnuts. I microwave my bars for 30 seconds or so before eating.


Directions

Preheat oven to 350 degrees.

In a large bowl combine the oatmeal, coconut flakes, honey, maple syrup, cinnamon, baking powder, 1/2 the raspberries and walnuts. Stir until mixture is combined.

In another bowl combine almond milk, egg and vanilla extract. Mix until egg is thoroughly combine with milk and vanilla.

Next spray a 13x9 pan with cooking spray, coat pan thoroughly). Spread oatmeal mixture evenly on bottom of prepared pan (it will be thin). Pour milk mixture over oatmeal mixture in pan. Shake pan slightly to allow milk to soak in. Top mixture with sliced bananas and remaining raspberries.

Bake in 350 degree oven for 35-40 minutes. Allow to cool before eating. Cut into 10 bars. Keep bars refrigerated. Can freeze for later use.
