Introduction

Great on roasted pork tenderloin. Great on roasted pork tenderloin.
Number of Servings: 12

Ingredients

    6 Granny Smith apples, pealed, cored and 1/2 " diced
    1 cup chopped onion
    2 T minced fresh ginger
    1 c freshly squeezed orange juice (2 oranges)
    3/4 cup cider vinegar
    1/2 c brown sugar, lightly packed
    1/2 c Splenda
    1 t whole mustard seeds
    1/4 t hot red pepper flakes
    1 1/2 t salt
    3/4 c raisins (optional)

Tips

The calorie count does not include the raisins since I don't like them.


Directions

Combine all ingredients in a large saucepan. Bring to a boil then reduce heat and simmer, stirring occasionally for 50 to 60 minutes until most of the liquid has evaporated. Take off the heat and add the raisins if using. Can be stored in the fridge for up to 2 weeks, or freeze in smaller containers.

Serving Size: Recipe makes about 3 cups or 12 1/4 cup servings
