Introduction
My own Italian Wedding soup recipe with ground turkey, Matzo meal and unsalted chicken stock to reduce fat and sodium content. This still has some sodium but less than many soups. Ingredients

Meatballs:
1 lb. ground turkey
1 egg
1/4 c. Matzo meal
1/4 c. onions, finely minced
1/4 c. Parmesan Cheese, grated
1 tsp. Italian Herb Seasoning
Soup:
1 T. olive oil
1/2 C. onions, chopped
1 tsp. minced garlic
1/2 C. carrots, chopped
1/2 C, celery chopped
6 C. unsalted chicken stock
1/2 tsp. salt
1/4 tsp. pepper
1/2 C. spinach, shredded
2 oz. pastina
Tips
If desired you may add additional Parmesan cheese when serving (not included in nutrition calculation).
Directions
1) Mix all ingredients for meatballs and shape into tiny meatballs using a teaspoon. Set aside.
2) Saute onion and garlic in olive oil in the bottom of a stock pot or large cooking pot. Add celery and carrot and cook briefly.
3) Add chicken stock, salt and pepper. Bring to a boil.
4) When boiling, gently add meatballs and stir gently to keep them from sticking together. Reduce heat and simmer about 20 minutes.
5) Add pastina and spinach and cook until pasta is cooked. Serve immediately.
