    1 tsp. Olive Oil
    0.3 Red Pepper, cut into strips
    0.3 Onion, cut into strips
    3 Crimini Mushrooms, sliced
    10 Asparagus Spears
    1 oz. Gruyere Cheese, shredded
    2 tbsp. Garlic Hummus
    2 slices Whole Grain Bread


Boil asparagus for 2 minutes, sautee all vegetables in olive oil until soft. Spread cheese on one slice of bread, top with vegetables. Spread hummus on other slice of bread and top sandwich. Grill sandwich in dry skillet on medium until bread is toasted on each side. Place sandwich in 350 degree F oven until cheese is melted, about 5 minutes.
