Introduction

Low fat, high protein pancakes!! Low fat, high protein pancakes!!
Number of Servings: 35

Ingredients

    DRY
    1 - egg substitute,
    2 2/3 cups of fat free Greek yogurt,
    4 tsp lemon juice,
    3 tsp vanilla extract,
    1/4c of water + 1/4 cup skim milk,

    WET
    4 tsp baking soda,
    a pinch of salt,
    1 1/3c whole wheat flour,
    4 tsp cinnamon.

Tips

The last batch we made gave us about 35 cakes, more than we anticipated. You can make them as big as you like, four (4) cakes equaling about one standard pancake.


Directions

Combine all dry ingredients together in a medium bowl, and all of the wet ingredients together in a separate bowl. Gently fold the dry into the wet until "just" combined. Cook 1/4 cup of batter for each cake on med-high heat in a slightly oiled skillet that has been sprayed with cooking spray.

Serving Size: Makes slightly larger than silver dollar size cakes, using . Our typical serving is four (4) cakes.
