Ingredients

    1 tbsp. Olive Oil
    1 large chopped onion
    2 tbsp. turkey bacon bits
    3 cloves garlic, minced
    3 links Turkey Italian sausage, casing remove
    4 cups unsalted chicken stock
    4 cups water
    1 large potato, halved and sliced 1/4"
    1 cup skim milk
    3 cups chopped kale
    salt, pepper, Cajun seasoning

Directions

heat olive oil, add onion, garlic and bacon bits. Cook 5 minutes or so. add turkey and cook til browned. add chicken stock and water, simmer for 20 minutes. add sliced potato and cook 10 minutes or until just tender. add milk and kale, salt and pepper to taste. cook 3-5 minutes. Turn off and let sit for 10 minutes.

Serving Size: makes 8 servings, app. 1 1/2 cups
