Ingredients

    1 bag frozen corn (3 1/3 cups)
    1 chopped onion
    2 Tbsp Extra Virgin Olive Oil
    1/4 cup flour
    2 packets Trader Joe's Chicken Broth, reconstituted with 2 cups water
    2 cups Milk, 1%
    1 large Russet potato, peeled and cubed
    4 oz frozen cocktail shrimp, thawed
    1 tsp ground thyme
    1/2 tsp Salt
    1/2 tsp Black pepper
    Chili powder, as garnish

Tips

Optional garnish: shredded cheddar cheese


Directions

Heat olive oil over in a soup pot over medium-high heat. Add onion and saute until soft. Add flour and cook for 1 minute. Whisk in broth and milk. Add corn and diced potato. Bring to a boil, reduce heat, and simmer for 10 minutes until potato is cooked and soup is thick. Add shrimp and spices. Heat through and serve.
