Introduction

Ingredients

    4 large eggs
    1 tbs 2% milk
    2 tbs parsley, chopped
    1 1/2 jumbo shallots, thin sliced
    7 garlic cloves, chopped
    1 bunch (about 3 c) broccoli rabe, trimmed, rinsed, and chopped
    2 tbs sundried tomatoes in oil, chopped
    1/4 c roasted red peppers, chopped
    1 tbs olive oil (or oil from jar of sun dried tomatoes)
    1/2 tsp fennel seeds
    4 oz Jenny-O lean turkey sausage, crumbled
    3 oz mozzarella
    1/4 c grated parmesan

Tips

*Try to add the tougher, stemmier pieces to the water about a minute and a half before the leafier, top parts. This will help them cook a little more evenly.


Directions

Bring a large pot of salted water to boil. Add broccoli rabe.* Boil until softened but not mushy, then strain and rinse with cold water until cooled. Squeeze out as much water as possible, and set aside.
In large sauce pan, add about 1 tsp of oil, then add all but a tbs of the garlic and all the shallots. Saute on medium low until soft and light caramel colored, stirring occasionally.
Once shallots and garlic are caramelized, add sun dried tomatoes and roasted red peppers. Turn heat up slightly to medium and sauté about 1 minute before adding the broccoli rabe. Make sure to pull apart any clumps of broccoli rabe that may have resulted from straining. Toss all together with some pepper, crushed red pepper, and a little salt. Set aside.
Rinse out pan, wipe clean, and place over medium heat. Add the remaining 2 tsp oil and the fennel seeds and toast them for about 90 seconds before adding the remaining garlic and the turkey sausage. Brown the turkey sausage into small crumbles and toss with broccoli rabe mix.
Whisk together eggs, milk, salt, pepper, and parsley. Pour half into a thin, even layer on a hot, greased non-stick pan. Evenly distribute broccoli rabe and sausage mixture on half the egg and top with half the mozzarella and half the parmesan. Fold the un-topped half of the egg over the topped half like a half moon, then bake in preheated 400 degree oven for about 7 minutes.
