Ingredients

2 (20oz) pkgs of Lean Grond Turkey
1 1/2 cups Italian bread crumbs
1 cups grated Mozzarella
1 cups finely chopped onion
2 cloves garlic, minced
1/2 cup fresh chopped parsley or (1/4 dried)
2 tsp basil
1/2 dried thyme
1 tsp salt
1/2 tsp pepper
3 eggs, beaten (you can used egg beaters)
1 cup shredded carrot
1 large (1 cup) shredded zucchini
1/2 cup ketchup
11-15 oz can of diced tomatoes with or without extra spices
***Adjust spices and choose vegetables that you and your family prefer: like add mushrooms peppers, etc.)
You can cook vegetables to soften if you in some stock or water or just shredd with a potato peeler and add into meat mixture.
Directions
1. Heat oven to 350*. Spray a large pan with vegetable spray.
2. Combine all the ingredients into a large mixing bowl. Using hands toss the ingredients lightly to evenly combine them, the knead the mixture well.
3. Transfer the mixture to your baking pan, shaping it into a 12" X 5" loaf.. Bake for 40 mins.. then spread 1/2 cup ketchup over the top. Keep baking until its coked through, about 35 mins more. Allow the meatloaf to rest for 15 mins before slicing it.
##Or you can measure out 4oz. (1/2 cup) of meat and place inside a muffin pan. Bake about 1/2 hr to 45 mins. ##
### When ready to used the frozen muffin meat loaves I place a toaster oven @350* and bake for 1 hr.
