Ingredients

3 cups bran
1 cup warm water
2.5 cups whole wheat flour
2.5 tsp baking soda
2 large eggs
2 tbsp blackstrap molasses
1/2 cup room temperature cold pressed olive oil
2 cups buttermilk
Directions
Soak 1 cup bran in 1 cup warm water in a small bowl.
In another bowl combine 2.5 cups whole wheat flour and 2.5 tsp baking soda.
In a third bowl, mix: 2 large eggs, .5 cup melted honey, 2 tbsp blackstrap molasses and .5 cup olive oil.
Add flour mixture and 2 cups of buttermilk alternately to egg mixture.
Add soaked bran and an additional 2 cups of bran. Stir until well mixed. May add raisins now or any fruit just before baking. Refrigerate this mixture for at least 6 hours before baking. Blueberries added just before cooking are really yummy (not in nutritional info.)
Bake at 400 F for 20 minutes or until done when tested with a toothpick.
