Ingredients

    1 large cucumber, peeled in strips, sliced thinly
    3 raw baby carrots, grated
    2 thin slices of onion, quartered
    1.5 tsp ginger root, grated
    1/4 c white vinegar
    2 tsp olive oil
    2 tsp sugar
    salt and pepper to taste

Directions

Add cucumbers, carrots, and onion to a big bowl.
Mix ginger, vinegar, oil, and sugar in a small bowl. Whisk well to combine.
Pour dressing over cucumber mixture
Add salt and pepper
Enjoy right away, or refrigerate for a more potent flavor.
