Ingredients

    1 Tbsp Garlic Minced
    1 Tsp Olive oil
    1 Tbsp Basil Dried
    1 Tbsp Oregano Dried
    1 Tbsp Parsley Dried
    1/4 Tsp Salt
    1/2 Tsp Black pepper
    5 C Tomatoes Chopped
    1 Tbsp Anchovy paste
    2 Tbsp Capers
    1 C Water


Tips

The serving size is for pasta but you'll use far less for chicken or fish. It's really good with Zucchini noodles or Spaghetti squash too.


Directions

Saute GARLIC in OIL over very low heat until soft, about 5 minutes.
Add HERBS-SPICES, stir 1 minute.
Add TOMATOES. Increase heat to med. Cover and simmer on low 20-30 min, stirring occasionally.
Mix in ANCHOVY. Mash with fork or potato masher to coarse texture.
Add CAPERS and cook 5 minutes.
Add WATER to desire consistency (use pasta water). Heat through. Adjust seasonings.


Serving Size: makes 4 generous servings
