Introduction

Ingredients

    1.5 cans dark red kidney beans (can use low sodium)
    1.5 cans light or regular kidney beans (can use low sodium)
    1/2 pack Colby and Monterrey Jack Cheese (1 cup yield)
    1 cans diced tomatoes & green chilies
    1 yellow onions, diced
    1 lbs. ground beef, cooked, crumbled, and drained
    1 1/2 pkg. cresent rolls (1/2 pkg. optional)
    cooking spray

Tips

Feel free to go with low sodium beans, lean ground beef, and fat free cheese as substitutes.


Directions

Preheat oven to 350 degrees. For the volume of this recipe use a 9x13x2.5 pan or deeper. Spray bottom of pan with cooking spray. Use complete package of cresent rolls to line bottom of pan.

Cook ground beef on stove top. Crumble and drain. With large mixing bowl add kidney beans, onions, tomatoes & green chilies, and cheese. Stir until well blended. Add ground beef to the mixture. Stir again and add to pan. (Optional) For design and some top layer crust add 1/2 pkg of cresent rolls -- tear and place).

Place in oven and cook for approximately 60 minutes (oven dependent). Remove and let cool. Enjoy.
