Ingredients

10 oz pasta
2 tsp olive oil
1 lb ground turkey
1 cup finely diced onion
1-2 cloves minced garlic, abt 2 tsp
1 can no salt added organic diced tomatoes
2 T. no salt added organic tomato paste
1 T Penzy's Tuscan seasoning (or any Italian seasoning w/o salt)
1/2 tsp black pepper
1/4 tsp white pepper
dash of red cayenne pepper
1 cup fat free shredded mozzarella cheese
Directions
Heat olive oil in skillet and brown turkey. While turkey is cooking, bring a pot of water to a boil & add pasta to cook while finishing turkey mixture.
Add diced onion when turkey is mostly cooked and stir/cook onion for abt 2 mins. Add diced garlic, stirring to cook briefly, being careful not to burn the garlic.
Open tomatoes & if they are really juicy, drain off a little juice. Add tomatoes and tomato paste to the turkey in the skillet. Add spices. Stir all to mix well and simmer on medium low heat while pasta cooks.
When pasta is cooked to al dente state, use a slotted spoon to lift pasta from cooking pot and add to turkey skillet. Stir to mix and turn heat down if the tomato juice is absorbed or add a little water from pasta pot if a little moisture is needed. Let the mixture simmer slowly for a few minutes to mix flavors. Turn to low; top with cheese and let cheese melt a bit over the skillet dinner.
