Ingredients

    2 cups yellow squash finely chopped or grated
    1 cup onion, finely chopped
    1 to 2 teaspoons fresh chives chopped
    1 egg beaten
    1 teaspoon salt
    1 teaspoon pepper
    1/2 cup plus 1 tablespoon all-purpose flour
    vegetable oil

Directions

combine squash, onion, chives, egg, salt and pepper. Mix in flour. Heat oil over medium-high heat and drop batter by tablespoonfuls into oil. Cook about 3 minutes per side and drain on paper towels.

Serving Size: makes about 12 croquettes
