Ingredients

    12 large eggs (or equivalent egg whites/Egg Beaters)
    4 oz Almond Breeze Unsweetened Vanilla (or skim milk)
    1/2 tsp Garlic Powder
    1/2 tsp Pepper
    1 cup chopped green peppers
    1 cup chopped onions
    1 can diced tomatoes (I used Hunt's Fire Roasted Diced with Garlic)
    1 package lowfat/no fat ham or turkey (I used Hillshire Farm Black Pepper Turkey Breast for the nutrition calculations)

Tips

Nutrition is based on 1/2 cup serving; double for 1 cup serving. Try salsa instead of diced tomatoes! Add cheese for more protein and calories.


Directions

Beat eggs with milk
Add in remaining ingredients and mix thoroughly
Pour into 1/2 cup muffin tins, leaving a little space for overflow
Bake in 350 degree oven for 45 minutes
