Introduction

I've always loved chicken salad, but I wanted a "spruce" it up a bit, so I added a few flavorful ingredients. This has now become one of my family's favorites! Ingredients

    4- 13oz. Canned Chicken Breast (in water)
    1 cup of chopped Pecans
    2/3 cup of Craisins
    6 Tbsp Lite Mayonnaise
    2 Tbsp Curry Powder
    2 tsp Onion Powder
    2 tsp Garlic Powder
    1 tsp Salt

Tips

You can substitute Greek Yogurt for the Mayo, if you want a lower fat option. You can also substitute raisins for the craisins and use any other type of nut you enjoy. Almonds are also very good in this salad.


Directions

Drain and rinse chicken then shred the meat with fork
Add Pecans, Craisins, Mayonnaise, Curry, Onion, Garlic and mix thoroughly. Add Salt to taste and Pepper, if desired.

Serve on a bed of lettuce, as a sandwich or by itself with crackers.
