Introduction

Great way to make the kids eat Zucchini and Squash! Great way to make the kids eat Zucchini and Squash!
Number of Servings: 4

Ingredients

    1 tbsp, extra virgin olive oil
    2 cups sliced zucchini
    2 cups sliced squash
    1 cup raw chopped purple onion
    1 tsp salt
    1 tsp pepper
    1/4 cup fat free mozarella shredded cheese

Directions

sprinkle you EVOO on a baking pan. make sure you spread it all over the pan so the vegetables won't stick. Take your sliced zucchini, squash and onion and spread on the baking sheet. Salt, pepper and then spread the mozarella on top of all of it. Put in the oven at 375-400 degrees and bake for 20 minutes (depending on your oven)
This makes 4 nice servings
