Ingredients

    6-8 eggs
    3 medium potatoes, sliced
    1 medium yellow onion, sliced
    1 c. baby spinach
    1/2 c. mozarella cheese
    salt and pepper to taste
    2 tbsp. olive oil

Directions

Preheat oven to 350. Spray a 9" pie plate with cooking spray. Heat olive oil in large skillet. Add potato and onion and cook over medium heat until onions are caramelized and potatoes are done. Meanwhile, mix eggs, cheese, salt, and pepper in a mixing bowl. Once onions and potatoes are done, add spinach and cook until spinach is wilted. Place potato mixture in pie plate. Add egg mixture on top. Bake for 30 minutes. Allow to cool for 5 minutes. Serve.
