Ingredients

3 Cups Water
1 Cup Steel Cut Oats
1/4 tsp salt
1 tsp unsalted butter
200 grams ripe banana (approx. 2 small)
1 tsp Vanilla Extract
1/4 tsp Ground Cinnamon
2 Tbsp Whole Flax Seed
30 grams Chopped Walnuts
Tips
Mason jars make excellent containers for make-ahead meals. Divide into servings and allow to cool to room temperature before refrigerating.
Directions
1) In a 2-3 quart sauce pan, bring 3-cups water to a boil.
2) Stir in salt and oats and butter.
3) Cover pan, reduce heat to low and simmer 10-20 minutes, stir occasionally.
4) While oats are cooking mash banana(s), grind flax seeds.
5) Remove oats from heat, let stand 5 minutes.
6) Stir in banana, vanilla extract, ground cinnamon and ground flax seeds.
7) Divide into 4 bowls or containers and top with chopped walnuts.
