Ingredients

1 1/2 cups ground oatmeal
3/4 cup oatmeal
2 tsp baking powder
1 tsp cinnamon
3/4 c milk ( I use lactaid)
2 eggs lightly beaten
1/3 c honey
1 ripe banana
2 tbls EVOO
1 tsp vanilla
1/4 c walnuts (optiional)
1 c fresh blueberries ( optional)
Tips
Instead of banana and blueberries you could add 1/2 c unsweetened applesauce, 1 tsp lemon zest and dried cherries.
Directions
Grind 1 1/2 cups oatmeal into flour and blend with remaining dry ingredients. Beat eggs lightly and add to wet ingredients. Stir in wet ingredients into dry until just blended. Fold in blueberries. Pour into lined muffin tin. Bake @ 375 for approximately 15-20 minutes.
