    I used 9 whole filets (found in the freezer section) and counted 1 filet as a serving.


This was an incredibly tasty dish; however, I found that dipping the fish in the oil did make it a bit greasy (even though it's healthy oil). If you have a spray bottle I would recommend trying spraying the filets instead of dipping them (of course, then you might have to spray the pan/foil for non-stick purposes).


Pour the olive oil into a bowl, mix all dry ingredients in a dredging pan. Dip the filets in the olive oil, then coat them with the bread crumb and parmesan mixture. Bake in 350 degree oven for about 15-20 minutes or until fish is flaky. I laid them directly on a foil covered cookie sheet and did not spray or otherwise coat the foil. The oil that I dipped the fish in served as it's own non-stick medium.
