Introduction

This recipe started off as a soup recipe, but morphed into a full bodies veggie-meat chili... YUM! This recipe started off as a soup recipe, but morphed into a full bodies veggie-meat chili... YUM!
Number of Servings: 10

Ingredients

    2 cups sweet potato, diced (or carrots)
    1 medium onion, minced
    4 stalks celery, minced
    1 small red pepper, diced

    1 can (19oz.) tomatoes, crushed
    1 can (19oz.) kidney beans, rinsed
    1 lb extra lean ground beef, browned
    1 can (10oz) chicken broth
    1 cup water
    1.5 cup salsa (your favorite kind)
    1/4 cup taco seasoning
    2 tsp. chili powder


Directions

1) Add the first 4 ingredients to a large pot, sautee on medium heat for 5 minutes.

2) Add the rest of the ingredients, and let simmer on low for 25-30 minute, or until potatoes are tender.

3) Allow 10 minutes to cool, top with cheddar cheese, and serve!
