Ingredients

    1 pgk 12 oz hot chorizo sausage
    1 c chopped red onion
    1 11oz can Mexican corn
    1 70z can chipolata peppers in adobo sauce
    1 can Fire roasted salsa style tomatoes
    1 can black beans
    1 handful fresh cilantro opt
    1 T cumin

Tips

Serve over polenta, rice or in wraps with cheese if desired.


Directions

Remove chorizo from casing. Add to large pot with chopped onion. Cook until done and onion is soft. Add rest of ingredients except cilantro, heat on low until heated through stirring occasionally, about 10 mins. Add cilantro and simmer another couple of minutes.
