Ingredients

    8 C baby spinach
    3 medium roast beets
    1 C toasted pecan pieces
    1 C goat cheese crumbles

    1/2 C olive oil
    1/4 C cider vinegar
    2 T honey
    2 T chopped raw onion
    1 t mustard

Tips

The spinach does get wilty in the dressing, so combine it just before eating. If you want to make a lot ahead and eat one portion at a time, use about 3 tablespoons of dressing.


Directions

Puree last five ingredients in a food processor. Combine spinach with dressing and split into portions. Peel and chop beets and top salads with remaining ingredients.

Serving Size: makes 4 medium servings (or 8 side salads)
