Ingredients

    1 large egg
    1/2 cup packed brown sugar
    1/3 cup melted coconut oil
    1/4 cup coconut palm sugar
    1/3 cup organic plain Greek yogurt
    2 tsp vanilla extract,
    1 tsp cinnamon
    1/2 tsp nutmeg
    1 Cup organic all-purpose white flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    3/4 cup grated carrots
    3/4 cup grated apples

Directions

* Preheat oven to 350F.
* Spray a 9x5 inch loaf pan with cooking spray & then flour the pan.
* In a large bowl combine egg, brown sugar, coconut palm sugar, melted coconut oil, greek yogurt, vanilla, cinnamon & nutmeg.
* Add in flour, baking powder & baking soda & mix carefully.
* Fold in grated carrot & apple.
* Bake for 45 - 52 minutes
