Introduction

Ingredients

32 oz of 36-40 Shrimp, peeled & deveined
2 Tbsp Oil
2 cups Salsa
2 cups Pepper Stir Fry Frozen
16 whole wheat tortillas
16 oz Mexican style shredded cheeses
Shredded lettuce (optional)
Light sour Cream (optional)
Directions
Preheat oven to 350. Lightly oil or spray a large baking sheet and set aside.
Heat a large saute pan on medium high heat and add oil. Add shrimp to pan and lightly saute, adding peppers when shrimp turn opaque. Reduce heat to medium. Add salsa and heat until mixture is lightly simmering. Remove from heat.
Open tortillas and layer each one with about 2 oz of shrimp and peppers, then cheese. Roll them up burrito style then place them seam down on prepared baking sheet.
Bake in oven for about 10 minutes, or until tortillas are soft. Remove from oven plate them up.
Because I feed a lot of differenty needs in this house, ( there maybe others out there like me), sometimes adding the peppers gets nixed. When I prep them sometimes, I saute the peppers seperately from the shrimp and salsa. I mark the ones that do have peppers in them with a tiny sliver of a pepper over the "peppered fajitas".
