    1/2 cup dry red lentils
    1 large potato diced
    1 large carrot diced
    1/2 onion diced
    1/2 pack of frozen spinach
    1 jar Trader Joe's red curry simmer sauce


I served over jasmine rice


I put everything but the curry sauce in my instant pot, covered with water and cooked on manual for 5 minutes. When the pressure came down I added the curry sauce.
