Ingredients

    2 c cubed watermelon
    2 c diced cucumbers
    4 T fresh chopped cilantro
    2 T rice wine vinegar
    2 t white sugar
    1/3 c peanuts, roasted

Tips

If not serving right away, wait to add the peanuts as they will get soggy


Directions

mix the vinegar with the sugar until it is dissolved. Add the other ingredients and serve.
