Ingredients

    16 oz bulk sausage
    8 oz mozzarella
    15 oz ricotta cheese
    2 eggs, beaten
    5-7 lasagna noodles
    1 large can crushed tomatoes with basil
    3/4 cup onion, chopped
    2 cloves garlic, minced
    2 tbsp Parmesan
    1tsp oregano
    1 tsp parsley
    1/2 tsp salt
    1/8 tsp pepper

Tips

If you would like to freeze for later use, use a metal pan and let lasagna sit and cool after topping with final mozzarella layer. Up baking time to 45-55 minutes. Be sure to test temperature in the middle of lasagna to ensure it has fully cooked.


Directions

Preheat oven to 375 degrees Fahrenheit. Brown sausage with onion. While sausage is browning, boil lasagna noodles according to directions on package. Drain any fat and add garlic. Add tomatoes and seasonings to sausage. Reduce heat to low and simmer until heated through. In a small mixing bowl, combine beaten egg and ricotta cheese. In an 8 x 8 baking dish, layer 3 lasagna noodles, trimming off excess, then ricotta mixture, then sausage mixture, and top with half of mozzarella. Repeat layers. Bake for 30 minutes. Top with Parmesan and let sit for 10 minutes. Cut and serve.
