Introduction

Ingredients

1 cup vegetable broth
2 cups water
2 small sweet potatoes, cubed
1 can chickpeas, drained and rinsed
1 - 1 1/2 cups green beans, chopped
1/2 cup onion, chopped
1/2 cup tomatoes, chopped
1/2 cup green peppers, chopped
1/2 cup red peppers, chopped
2 tablespoons peanut butter
1 teaspoon cumin
1/2 - 1 teaspoon crushed red pepper
1/4 teaspoon cinnamon
1/4 teaspoon coriander
1/4 teaspoon fresh grated ginger root
small bunch cilantro, roughly chopped
Tips
My favorite way to serve this stew is over rice or couscous.
Directions
1. Combine water, broth, peanut butter, and spices. Bring to a boil, then reduce to a simmer.
2. Add onions, and simmer 2-3 minutes. Then add sweet potatoes and chickpeas. Simmer another 10 minutes.
3. Add green beans and simmer 5-7 minutes.
4. Add peppers and simmer another 5-7 minutes.
5. Add tomatoes and simmer another 5-7 minutes.
6. Add cilantro, simmer until wilted. Serve warm.
Serving Size: Makes 4 servings of about 10-12 oz each
