Ingredients

    1 tbsp olive oil
    1/8 cup corn kernels, frozen or fresh
    1/8 cup sliced yellow or red peppers
    1/8 cup sliced yellow onion
    3 oz. cooked chicken breast (leftover from a rotisserie chicken)
    1/2 tsp cumin
    salt to taste
    1 tbsp lime juice
    1 tbsp salsa verde
    1 large burrito-size tortilla
    1/8 cup shredded 4-cheese Mexican blend
    2 tbsp queso dip (w/ jalapeņos optional)

Tips

Mix up a multiple batches of the chicken and veg mixture and keep it in the fridge for a couple days (or freezer for longer) to make a burrito when you need a really quick meal.


Directions

Saute corn and peppers in oil until they start to color. Add onions and salute 2 more minutes then add the chicken, cumin and salt. After a couple more minutes add the lime juice and swish to get any brown bits from the pan. Then add the salsa verde and simmer 5 minutes.

Lay the tortilla on a microwave safe plate, add the shredded cheese and microwave on high for 30 seconds. Add 1 tbsp of the queso dip and the vegetables and chicken, then roll up the burrito. Place seam side down, top with the other 1 tbsp of queso dip and microwave an additional 15-30 seconds (depending on your microwave).


Serving Size: makes 1 burrito
