Ingredients

1 ripe avocado
2 large eggs
1 tablespoon chopped chives
salt & pepper to taste
Tabasco to taste (optional)
Tips
If you enjoy soft yolks try to get the yolks into the avocado first and then allow the whites to cover them - it takes a bit of practice
Directions
Preheat oven to 425F (220C)
Slice the avocados in half length ways and remove pit. Scoop out approx two tablespoons of avocado to make room for the egg.
Place the avocados in a small baking dish so that they will not tip over.
Crack an egg into each avocado half.
Bake for 15 to 20 minutes or until whites are set.
Season with salt, pepper and a dash of tabasco and garnish with chives.
