Introduction

Great warm meal on a cold winters day Great warm meal on a cold winters day
Number of Servings: 10

Ingredients

    2 Tbs Olive oil
    2 cups Lentils
    4 med Potatoes, diced very small
    1/2 long Sweet potato, diced very small
    1 med Onion, diced
    5 cloves Garlic, crushed
    1 tsp Ginger Root, grated
    6 tsp Chicken stock, Massel
    1/2 tsp Cumin ground
    1/2 tsp Coriander ground
    1/2 tsp Mixed herbs, dried or 1 tsp fresh
    8 cups Water, boiled

Tips

Serve with fresh paratha or naan bread
For more flavour add chopped fresh Coriander & Cayenne Pepper just before serving


Directions

1. Set pressure cooker to brown setting till hot
2. Add oil, onion, garlic, ginger & fry for about a minute
3. Add cumin, coriander & lentils, mix well & fry for another minute
4. Add water & stock
5. Set pressure cooker to high setting & airtight for 25 minutes to cook

Serving Size: makes 10 cups
