Introduction

Full of flavor and so easy to make! Full of flavor and so easy to make!
Number of Servings: 11

Ingredients

    1 tbs olive oil
    2 cloves garlic, minced
    1 jalapeno, chopped
    1 cup quinoa (uncooked)
    1.5 cup water
    1 can black beans, rinsed (15oz)
    1 can fire-roasted diced tomatoes (14.5oz can)
    1 tsp chili powder
    1/2 tsp cumin
    Juice of 1 lime
    Salt and pepper to taste

Directions

Put oil, garlic and jalapeno in a large skillet and heat over medium high heat until fragrant, while stirring frequently.

Stir in remaining ingredients. Bring to a boil; cover with lid and reduce to low heat. Let simmer for about 20 minutes.

When done, can add optional avocado and shredded cheese if desired.

Serve warm

Serving Size: Makes 11 1/2-cup servings
