Ingredients

2 large Egg, fresh, whole, raw
0.50 cup Butter, unsalted
1 tsp Salt
2 tsp Vanilla Extract
2 tsp Baking Powder
1 tsp Baking Soda
1.75 cup Milk, 2%, with added nonfat milk solids, without added vit A
1.5 tbsp Distilled White Vinegar (by FIBU69)
6 tsp Granulated Sugar
210 grams Flour, white
Tips
I make these in double batches and toast them for my husband to eat in the morning.
Directions
1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt; set aside.
2. In a medium bowl, whisk together the buttermilk, butter, egg yolk and vanilla extract. Add the wet ingredients to the dry ingredients and gently whisk to combine. Do not overmix! Meanwhile beat egg whites until fluffy and fold into the batter until fully incorporated.
3. Preheat a waffle iron, and spray if necessary. Once the waffle maker is ready, add the batter according to the manufacturer's instructions and cook for 5 minutes on Belgian setting, or until the waffle maker indicates they are ready. Serve immediately, or place in a 300-degree oven to keep warm. Leftover waffles can be wrapped in plastic wrap, placed in a ziploc bag and stored in the refrigerator for 2 days or in the freezer for up to 1 month.
