When someone roasts a chicken, I'm always up for a leg or a thigh. But chicken breast can sit in my fridge for days without any interest from me. So I'm always looking for ways to turn boring old breast into something deliciously juicy and scrumptious. When someone roasts a chicken, I'm always up for a leg or a thigh. Ingredients

2 roasted chicken breast quarters (entire breast w/skin)
350g Broccoli (about half a medium head)
2 small onions
2 large eggs
4 medium sized mushrooms
125g shredded mozzarella cheese
A healthy handful of fresh parsley
1 tbsp dijon mustard
1 tbsp olive oil
Salt and pepper to taste
Directions
Finely chop the mushrooms, onions and parsley. Set aside. In a bowl, shred the broccoli using a grater. You should get 'rice-sized' consistency. Any sections that you can't shred, just chop finely.
Pull apart the chicken breast and chop quite finely. Add to the broccoli, along with the other chopped ingredients. Add the egg, mustard, salt and pepper to taste, plus the shredded cheese. Mix through until all ingredients are combined.
In a large frying pan, heat the oil. Divide the mixture into 8 portions and pat into burger shapes.
While you are frying, the mixture will be a little loose, particularly due to the mushroom, which will shink during cooking. Wait until each burger has become browned and cripsy underneath, before you carefully turn them over.
Probably around 10 minutes frying on either side for a nice, browned and crispy burger.
Serving Size: Makes 8 nicely sized burgers
