Ingredients

    *Rhubarb, 1 cup, diced
    Onions, raw, .25 cup, chopped
    Pompeian Gourmet Red Wine Vinegar 1tbsp, 4 tbsp
    *(C) Garlic, minced, 3 tsp
    Olive Oil, .25 cup
    Honey, 3 tbsp

Directions

add rhubabrb, garlic, onions, vinegar, and honey in a small saucepan. bring to boil, reduce heat and simmer until rhubarb is soft. transfer to jar and drizzle in oil, shake and serve.
