Introduction

These balls I have made according to Italian site, Vincencoīs Plate, with some changes.They are made of Ricotta, an Italian whey cheese from sheep milk whey left over from the production of cheese. Itīs very quick to make them suitable with coffee, or for visitors. Ingredients

    250 g Ricotta
    100 g granulated sugar
    100 g desiccated grated coconuts, additional 50 g coconuts to coat the balls
    10 g Dutch cocoa
    2 tbsp rum

Directions

1. Remove liquid from Ricotta and mix with sugar, coconuts and rum
2. Place the half of the mixture in a separate bowl and stir in cocoa
3. Make balls and wrap them in coconuts
4. Refrigerate for a couple of hours and serve
