Ingredients

    4 stalks green onion, chopped
    1/2 red bell pepper, chopped
    1 cup chopped fresh mushrooms
    4 stalks chopped celery
    1 T oil
    3 cups fresh baby spinach
    4 oz chopped kilsbasa sausage (or equivalent to one cup)
    2 cups shredded sharp cheddar cheese'
    12 large or jumbo eggs
    3/4 c 2% milk
    cooking spray

Tips

This is good served with toast and jelly, or topped with sour cream and salsa.


Directions

Chop green onions, bell pepper, celery, and mushrooms. Place in frying pan with 1 T oil and brown at medium heat for about 3 minutes. Add chopped sausage and spinach. Continue to cook on med heat until spinach is broken down and wilted. Place this mixture in a 9x13 baking pan that has been sprayed with cooking oil Add shredded cheese and layer over veggie/sausage mixture. spread evenly. Mix 12 eggs and milk in mixing bowl. Stir until well mixed. Pour eggs mixture evenly over cheese layer. Bake in 350 degree oven for 30 - 40 minutes or until knife inserted into center comes out clean. Cut into 12 equal pieces and serve hot.
