Ingredients

    1/3 cup butter
    2 1/2 cups warm water
    1/3 cup honey
    1 T. plus 1 1/2 tsp active-dry yeast
    7 cups whole wheat flour
    1 T. sea salt

Directions

- melt butter, then stir together with warm water, honey, yeast, and 3 cups of flour. Cover, in warm place, let rise half hour.
- line baking sheet with parchment
- uncover bowl, stir in rest (4 cups) flour and salt until just combined, dump on floured surface
- kneed for 1 minute.
- Cut in half, roll each into 12" x 9" rectangle. Roll up long way, so each loaf is 12" long. Place seam side down on baking sheet, let rise half hour until doubled.
- bake 350 degrees for 20-22 minutes.

Serving Size: 2 loaves, 16 slices each
