Ingredients

    Baby Bella Mushrooms (3 oz), 2.5 serving (remove)
    Garlic, 1.5 clove (remove)
    Spinach, fresh, 1 package (10 oz) (remove)
    1 large egg (per the egg board) 50g, 6 serving (remove)
    Milk, 1%, 1.5 cup (remove)
    Feta Cheese, 3 oz (remove)
    Parmesan Cheese, grated, .33 cup (remove)
    Cheese, Mozzarella, Part Skim, Kroger (shredded, 1/4 cup), 3 serving (remove)

Directions

Preheat oven to 350. Slice Mushrooms. In nonstick pan saute mushrooms & minced garlic & sprinkle salt & pepper. (cook over medium high 5-7 minutes).
Spray pie pan with Pam.
Spread spinach (frozen - thawed & drained or fresh chopped) in the bottom of the pie pan. Add the cooked mushrooms & feta cheese.
In bowl whisk together the eggs, add milk Parmesan & another small sprinkle of pepper. Whisk to combine. Pour over the spinach, mushrooms & feta.
Sprinkle the mozzarella on top. Place in oven & bake until golden brown & center is solid. About 45 minutes to 1 hour.
