Introduction

This sandwich was inspired by a similar dish I have enjoyed at D'Amico & Sons restaurant in Minnesota. Fresh basil leaves give this sandwich a different, but very good, taste. Ingredients

    2 slices of any bread, I used italian
    3 fresh basil leaves
    1 roma tomato, sliced
    1 slice of fresh mozzarella
    1 tbsp (or slightly less) olive oil for drizzling

Directions

makes 1 medium sandwich

drizzle one side of one slice of italian bread with olive oil and place on panini maker or in hot pan

layer basil leaves on slice of bread

layer tomato slices on top of basil leaves

layer mozzarella slice on top of tomato slices

top with second slice of bread and drizzle with olive oil

cook until sandwich is toasted on both sides and cheese is melted. About 3 minutes in panini maker, 5 minutes total in hot pan.

    Delish! It is amazing how wonderful this simple sandwich can taste. It's filling and satisfying, and not too many calories. It's actually really good without olive oil, too. I have this a couple times every week for lunch. Another variation is to use olive tapenade in addition. - 12/10/08
