Ingredients
Oranges, 4 large (3-1/16" dia)
Alcohol, Wine Red (Merlot or Cabernet Sauvignon), 1 cup
Orange Juice, 1.5 cup
Granulated Sugar, 0.25 cup
Cinnamon Stick
Directions
Pierce whole oranges (skin on) in several places and place in pot with wine, 1 cup juice and cinnamon stick.
Bring to boil, reduce heat and simmer, covered, over low heat for an hour (or until oranges are soft).
Turn and oranges occasionally to prevent sticking and burning and keep an eye that liquid does not reduce too much.
After an hour and when fluids have begun to caramalese, remove pan from heat and remove cinnamon stick. Stir in another half cup juice and the sugar and return to low heat, stirring until sugar has dissolved and fluid mix has thickened to a runny toffee consistency.
Remove oranges to serving dish and pour toffee mix over. Serve warm or cold, with non-fat yoghurt or ice-cream if desired.
