Introduction

Number of Servings: 6

Ingredients

    1 medium onion, chopped
    1 garlic clove, chopped OR minced
    2 T olive oil
    1 medium green bell pepper, diced
    1 tsp chili powder
    1 tsp cumin powder
    1 cup chopped tomato OR 2 T tomato paste
    1 cup corn (frozen OR fresh)
    1-1/2 tsp salt
    1 tsp oregano (dried or fresh)
    4 cups cooked beans (kidney, black OR pinto)

Tips

You can used canned beans, but be sure to drain & rinse them thoroughly.


Directions

Saute onions & garlic in oil until soft.

Add green pepper & spices, sauce another 2-3 minutes

Add tomatoes & corn.

Mash 2 cups of the beans & add to pot along with the whole beans, salt & oregano.

Simmer 30 minutes

Serving Size: makes 5 - 6 (1 cup) servings
