Ingredients

    this is a doubled recipe, easily halved
    2 cups dried lentils (makes 5 cups cooked)
    1 can crushed tomatoes
    1 cup evaporated milk
    2 cups water
    4 tbsp butter
    1 tsp cumin
    1 tsp cayenne
    garlic
    ginger
    cilantro

Directions

boil lentils till able to be mushy (10-20min)
drain, return to pot
add tomatoes, butter, spices garlic and ginger
bring to a simmer. cover and let simmer for 30 minutes
once mixture is thick and not watery, add milk and cilantro. serve
